I grew up with Diana - she was our neighbor and good friend.
One thing that she made that I thought was so yummy was Chicken 'n Dumplings.
My mom had never made any such thing.

For years I have tried to make her recipe but failed.
Last night, I tried a recipe from pinterest and really liked it.

Now I have my own Chicken 'n Dumplings recipe!

I tried a new recipe tonight - Honey BBQ Chicken.
Jasmine and Al both love barbeque chicken, but they love Ron Dodd's barbeque chicken. Ron Dodd won't share his recipe. So I have never attempted to make barbeque chicken as I didn't think mine would live up to his recipe and I didn't want to be compared.
Jasmine was always the most adamant that Ron Dodd's recipe was secret and the best.
Jasmine left last week.

Tonight I made a pretty yummy honey bbq chicken dinner. I didn't get to try it because the boys ate all of it.

Roast Chicken

Have you ever roasted a chicken before? I hadn't.
WHY? You can buy one already done at costco, safeway or walmart for $5.
To buy one at the store raw, it is at least $4
$1 savings for a lot of WORK.
BUT I wanted to try it.

So I bought a little chicken. I cleaned it. I took out the neck and the gizzards.
I seasoned it with salt, pepper, rosemary and thyme. I drizzled my potatoes, onions and carrots with olive oil and the same seasonings in the same pan. I sprinkled fresh lemon juice over it and put the cut lemon in the cavity of the chicken.
It cooked for 90 minutes.

I made rolls while it was cooking in the bread machine.

Alex came home from being with the missionaries to tell me that he had already eaten. And then he saw my face totally deflated and said, "but wait, K... I can eat some more". Bless his heart.
We had a nice dinner.

I would make another roast chicken. It makes the house smell yummy and there is a sense of satisfaction (at least for me) of not just picking up a ready made chicken but doing it myself!

Slow Cooker Chicken with Rosemary, Apples and Onions

We made a few adaptions. I didn't use fresh rosemary. I also used 2 boneless skinless chicken breasts and then some dark meat that I had in the freezer.

The house smelled so yummy.
Jasmine gave it an A but she loves RICE
Bret liked it
Alex didn't like it but he was having a hard time with math a few minutes before we ate and I think his mood was negative because of that!

Yummy Grilled Chicken

Bret and I have been doing this marinade for years. It really is just tweaking the recipe on the back.

I take several chicken breasts and put them in a freezer ziploc or a rubbermaid. I place a cut up lemon or two (squeezed) and a cut up onion in the container. I add a fajita seasoning packet. I also add a couple of tablespoons of oil and water. I let marinade for at least a couple of hours if not a day or two. You could easily add a pepper, but I rarely have those in my fridge.

When Mark and Amy were here, the chicken ended up marinading for a couple of days. It turned out great and flavorful, as always.

Chicken in Creamy Pan Sauce


Jazz gave this an 8. She said if I had cooked rice to go with it, she would have given it a 10.
Alex gave it a 10 but he is always trying to kiss up to me.

4 boneless skinless chicken breasts
2 Tbspn flour
1 Tablespoon oil
3/4 cup reduced chicken broth
4 oz Philadelphia Cream Cheese

Coat chicken with flour. Heat oil in large skillet on medium heat. Add chicken, cook on each side until cooked through.
Remove chicken from skillet. Cover chicken to keep warm.

Add broth to skillet. Stir to scrape up browned bits from bottom of skillet. Add cream cheese. Cook 2-3 minutes or until cream cheese is melted and sauce starts to thicken. Stirring constantly with wire whisk.

Return chicken to skillet. Turn over both sides of chicken with sauce. Cook 2 minutes or until chicken is heated through.

Bistro Chicken Pasta Salad

Bistro Chicken Pasta Salad

Prep Time: 25 min
Total Time: 25 min
Makes: 4 servings, about 1-1/3 cups each

What You Need!
2 cups cooked penne pasta
1 cup quartered cherry tomatoes
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
1/2 cup prepared GOOD SEASONS Italian Dressing Mix for Fat Free Dressing
1/3 cup lightly packed fresh basil, cut into strips
1/4 cup chopped red onions
1/4 cup chopped sun-dried tomatoes (not oil packed)
1/2 lb. boneless skinless chicken breasts, grilled, cut into 1/4-inch-thick slices
Make It!

COMBINE all ingredients except chicken.

TOP with chicken.

Make Ahead
Prepare as directed. Refrigerate several hours or until chilled.
Substitute
Prepare using ATHENOS Crumbled Feta Cheese with Basil & Tomato.

Asian Chicken and Orzo Salad


We tried this recipe but it was a no-go. Alex and Jasmine really like the orzo pasta so I'm going to try it in other ways.

Kathy Ganem's Chicken Soup - chocked full of veggies

No pictures of this one but it was easy to make and Bret loved it because of all the veggies.

1 can green chili
1 can corn
1 can crushed tomatoes
1 cup chopped celery
1 cup chopped onion
1 cup sliced carrots
1 sliced zuchinni
1 sliced yellow squash
6 cups of chicken broth
1-2 pounds of diced up chicken (I bought a chicken from the deli and let Alex have a few bites and tore off the rest for the soup)
2 tablespoons of chili powder
1 teaspoon sage
2 tablespoons salt
2 teaspoons pepper

In a large pot, mix all ingredients. Cook till food is tender.

Serve with tortilla chips.
In a skillet, add 3 tablespoons of vegetable oil and heat. Add cut corn tortillas and minced garlic with cilantro. As tortillas crisp, place on paper towel to dry; salt immediately.

Serve the soup with grated cheese, sour cream, chopped avocado too!

Last Night's Dinner

I really like to read magazines and pull recipes out and try them. When I'm home, I probably try at least one new recipe each week.
This week, it was Three Cheese Chicken Penne Pasta Bake.

It was pretty dang good! Whenever I try a new recipe, I always have Bret and the kids tell me if it is a repeat and rate it. Then when I file the recipe, I put their ratings on it.

This was easy to make and had spinach in it - which Bret loves. Try it!
