This morning I had strawberries and lemons. I was thinking that sounded like a yummy partnership. I found this recipe and went for it.

I realized when I was taking them out of the oven that I had forgotten to put the sugar on top prior to baking.

So I made a quick lemon glaze and poured that over to add another layer of yumminess.

Janice's Lemon Pie

I sent a box of citrus love to my boss' parents in Wisconsin a few weeks ago. Janice sent me an email saying that she had made a lemon pie with the lemons. I asked for the recipe and finally got the courage to make it. I don't think it quite turned out.....


Lemon Pie

3 Tbs. cornstarch 3 egg yolks
1 ½ cup sugar 1 ½ cup boiling water
Juice and grated rind of 1 ½ lemons

Combine cornstarch and sugar. Add grated rind and juice. Add the beaten yolks and 1 ½ cups boiling water, slowly. Then cook on medium heat until thick. Pour into baked crust . Cover with meringue.



Never Fail Meringue

Combine 2 Tbs. sugar and 1 Tbs cornstarch in small saucepan. Add ½ cup water, cook over medium heat, stirring constantly until mixture is thick and clear. Cool. Beat 3 egg whites with 1/8 tsp salt and ½ tsp vanilla until soft mounds form. Add 6 Tbs sugar gradually, beating well after each addition. Add cornstarch mixture, continue beating until meringue stands in still beaks. Top pie and bake 10 to 12 minutes at 350 degrees (until it is golden brown.

I like this meringue because it get so nice and fluffy.

Easy Lemon Ice.
This was in my free Kraft magazine that I get. It looked cool but wasn't all that spectacular. Easy though!
1 package of Jello Lemon (3 oz)
1 cup cold seltzer
zest and juice from one lemon
Cool Whip whipped topping in a can
6 fresh strawberries

Add 1 cup boiling water to gelatin mix in bowl. Stir for 2 minutes until completely dissolved. Stir in seltzer, zest and juice.
Pour into 9 inch square pan and cover.
Freeze for 3 hours or until firm. Remove from freezer. Let stand at room temperature for 10 minutes.
Use spoon or fork to scrape gelatin mix into small pieces. Spoon into dessert dishes. Top with 1 Tbsp Cool Whip and one berry.
Serve immediately.

Chocolate-Lemon Bars: Not so much


Not sure if it was me or the recipe, but these tanked!

What You Need
20 FAMOUS Chocolate Wafers, finely crushed (about 1 cup crumbs)
2 Tbsp. margarine or butter, melted
2 eggs
1 Tbsp. grated lemon peel
2 Tbsp. lemon juice
1 cup granulated sugar
2 Tbsp. flour
1/4 tsp. CALUMET Baking Powder
2 Tbsp. powdered sugar
Make It
PREHEAT oven to 350°F. Mix wafer crumbs and margarine; press firmly onto bottom of 8-inch square baking pan. Bake 5 min.
MEANWHILE, beat eggs, lemon peel and lemon juice with wire whisk until well blended. Add sugar, flour and baking powder; mix well. Pour over crust.
BAKE 25 min. Cool on wire rack 10 min.; sprinkle with powdered sugar. Cut into 16 squares. Serve warm. Store leftover bars in tightly covered container at room temperature.
