When Lindsay and I dropped in on our sweet friend Elizabeth Miller from Milwaukee, she was making homemade caramels.
I'm not a caramel person - or at least I didn't think that I was.
These were delicious!

Grandmas Caramels
By Margaret Earl (Elizabeth Miller's grandma)

1 can condensed milk
1 cup brown or regular Karo syrup
2 cups brown sugar
1/4 lb butter

Combine all ingredients in heavy pan and cook for 20 minutes from the moment you put it on the heat stirring constantly.
Pour into buttered pan or dish.
Cut and wrap in waxed paper.
If caramels are sticky, use corn starch on cutting board.

Snickers Cupcakes

These were very time consuming to make. They looked amazing. However, next time I would use a regular cupcake mix (probably devil's food), as I thought this recipe was dry. I will also add more snickers in the "middle". And finally the frosting was delicious and I will use for other sweet treats.

Homemade Peanut Butter Cups

To make the Peanut Butter Insides:
one jar of creamy peanut butter
one stick melted butter
one pound of powdered sugar


This makes a ton. I usually do about 1/3 of this. You want the consistency to be so that you can roll the peanut butter into little balls.

Buy a mold from some place like Michael's. These are only a couple of dollars. I would recommend buying several so that when one is "setting" in the freezer while you are working on another batch.

Melt the chocolate. I always use the double boiler method because that is how Mom taught me. Put a small amount of melted chocolate in the cup of each mold. Place a rolled up ball of peanut butter yumminess. Put more chocolate on top. Place in freezer until hard.
Eat.

Jen's Sweet Chex Mix Recipe

9 cups Rice Chex
9 cups Golden Grahams
2 cups coconut
1 cup sliced almonds
1 cup sugar
1 cup Karo syrup
3/4 cup margarine

Boil 1 cup sugar, karo syrup and margarine for two minutes.
Spread over dry mixture on wax paper
Cool completely.

Makes Lots - Enjoy

Kristi Bigelow's White Chocolate Party Mix


This is a recipe from a friend - we love it.

White Chocolate Party Mix
5 cups Cheerios
5 cups Corn Chex
2 cups Salted Peanuts
1 lb M & Ms
1 pkg (10 oz) mini pretzels
2 pkg (12 oz) vanilla chips
3 Tbs oil

Combine all ingredients except chips and oil in bowl. Microwave chips and oil on medium-high heat 2 minutes. Stir. Microwave on high 10 seconds. Stir until smooth. Pour over cereal mixture and stir well. Spread on wax paper. Cool. Break apart.

Baking for Christmas

















I spent a whole day in the kitchen baking for Christmas goodie plates. The kids even helped! We made homemade peanut butter cups, peppermint cupcakes, sugar cookies, and attempted to make Denise's yummy brownies! I had cute Christmas plaid plates that we put the items on and took them out to deliver them to friends.
